When it comes to the holidays, there are a lot of options for treats. Whether you prefer to make or buy your confections, each option has its own unique set of benefits and drawbacks. How to make freeze dried candy?

It is simple.

When you were a kid, you may have had candy that you just ate and then it gradually dissolved on your tongue into nothingness. This kind of candy is called “freeze-dried” candy because the first step of its creation is to freeze the water out of it.

How does this work? To understand how freeze drying works, first we need to know what ice cream is supposed to be like. Ice cream should be frozen solid so that the ice crystals are as small as possible, but also smooth enough so they don’t damage any part of our mouths when we eat them (which would be painful!). This texture is only possible if all of these little particles are arranged in a really organized way where they don’t obstruct each other. We call the measure of this perfection in ice cream texture “hardness”.

When we freeze something, like a bowl of water or our breath on a cold day, this is what happens: Water molecules slow down and start to vibrate as they bump into each other.

Eventually these vibrations cause the water molecules to bump together so hard that they link up with their neighbors and form ice crystals which grow until there is no more room for them.

Eventually all of the water has frozen and we have a solid chunk of ice. If you leave it long enough it will turn back into a liquid because heat from your hand will warm it up enough to re-start the vibrations of the water molecules.

But if you’re really fast, this is what happens:

Freezing Point Depression

Water has a very low freezing point, so when we add salt or other chemicals to it which are “Lowering Agents”, they cause the freezing point of the water to become even lower. This gives us more time to work with our candy before it freezes solid! Instead of 3 min at -20C, we can have up to 20 min at -30C!

Step 1) Mix your candy into its final flavors and colors. We used rock candy because we wanted giant sweet rocks that look almost good enough to eat but definitely not, just in case my year old son decided he wanted to eat my homework.

Step 2) Chill your candy mixture in the freezer for about 30 minutes (or more if you want).

Step 3) Coat a pan with vegetable oil and pour the candy onto it like so:

Step 4) Transfer this carefully to the oven and set it to 170 degrees Celsius or 340 degrees Fahrenheit. Be careful because the pan will be hot! If I had used butter instead of oil, this would taste even better!

Then just wait until all of the candy has dried out into rocks. It takes about 6 hours but could take longer depending on how thick your candy is when you put it in there plus how cold your oven gets. You might need to turn the heat down!
Step 5) Add the candy to a jar and seal it up.

Step 6) Put it in the freezer for about 3 hours until your rocks are frozen solid.

How Long Does Freeze Dried Candy Last?

Freeze dried candy is best kept in a cool, dark place. It should be safe to eat for several years after the date on the package. However, even when properly stored, freeze dried candy won’t taste fresh forever. The flavor starts to fade around 8-10 years from manufacture. This doesn’t mean that you shouldn’t eat your candy 10 years later it just may not be at peak freshness.

Are Freeze Dried Candies Healthier?

And yet kids still want it. But the cake they get are chock full of sugar, trans fats, high fructose corn syrup or any other number of unhealthy things. Then came along the new wonder food of the 80’s! Freeze dried candy!

But are freeze dried candies better?
They found that freeze drying does dehydrate all of the fat & water from foods but also removes most nutrients so after looking at some kinds of common candy there really wasn’t anything significant to make them any healthier than their more conventional counterparts.

Also, the reason why freeze dried candy can be had in flavors like Banana or Strawberry is because of these two ingredients’ respective smell & taste receptors (specially that for fruit). The smell and taste receptors are still there but without outside signals they’re useless, ergo you get artificial banana/strawberry flavors instead.

Does it Have Less Calories?

If you have to eat something unhealthy at least it’s better if it’s freeze dried! Like most dehydrated foods most candies are between 80-90% water so removing the water makes less room for all those fat, calories & sugar to pack into. So despite not being any healthier than regular candy freeze drying does make them less unhealthy.
